CPD guide

You can do allergen awareness training online in the UK with Lift College. Allergen Awareness Training is 1 hour of learning in 4 short modules, written for anyone who prepares, serves or sells food in England, Wales, Scotland and Northern Ireland, with the food information law for each nation explained. It costs £19.99 pay once, gives you a CPD certificate issued by Lift College the same day you pass, and comes with a free refresher every 12 months. Employers look for a certificate that records the course, hours, completion date and refresh date, and Lift College's certificate shows each of these.

What employers look for in an online allergen awareness certificate

Your employer decides what allergen training you need, and so does the environmental health officer who inspects the business. Food law requires every food business to give accurate allergen information for everything it sells and to make sure staff are trained and supervised in food safety matters in proportion to their work, which includes allergens. When an employer or an inspector checks a certificate, they usually look for:

  • Content that follows current food information law. Retained Regulation (EU) No 1169/2011 across the UK, the Food Information Regulations 2014 in England and the parallel 2014 Regulations in Wales, Scotland and Northern Ireland, and the prepacked for direct sale rules known as Natasha's Law.
  • A clear, verifiable record. The course name, hours of learning and completion date, with a way to confirm the certificate.
  • The essentials every food handler needs. The 14 allergens, how information must be given for prepacked, prepacked for direct sale and loose food, allergen matrices, preventing cross contact, taking an allergen request and responding to a reaction.
  • A refresh date. Menus, suppliers and the law change, so a refresh date matters.

Lift College's certificate does each of these. It records Allergen Awareness Training, 1 hour of learning, your completion date and a recommended refresh date 12 months on, with a unique certificate number and a verification link. Your employer will also show you the allergen matrix and the ordering process for your own kitchen or counter, and the course prepares you to use them.

What the Lift College course covers

There are 4 short modules, each with a knowledge check, then a multiple choice final test with an 80% pass mark and unlimited free retakes.

  1. Allergy, intolerance and the 14 allergens. How an allergic reaction differs from an intolerance and from coeliac disease. The 14 allergens: celery, cereals containing gluten, crustaceans, eggs, fish, lupin, milk, molluscs, mustard, nuts, peanuts, sesame, soya and sulphur dioxide or sulphites.
  2. The law and giving information. Food Information Regulations 2014 and retained Regulation (EU) 1169/2011, allergens emphasised on packaged food, Natasha's Law for prepacked for direct sale food, and written or spoken information for loose food.
  3. Controlling allergens in the kitchen. Allergen matrices and recipe control, checking deliveries and substitutions, storage and labelling, separate equipment and surfaces, cleaning, cooking order and preventing cross contact.
  4. Serving customers and emergencies. Taking an allergen request, checking rather than guessing, communicating with the kitchen, serving safely, and recognising and responding to anaphylaxis, including adrenaline auto injectors and calling 999.

By the end you can name the 14 allergens, explain how allergen information must be given for each type of food, keep an allergen matrix accurate when recipes or suppliers change, prevent cross contact in preparation and service, and respond correctly if a customer has a reaction.

Frequently asked questions

Which online allergen certificate do UK employers accept?
Your employer decides, and environmental health officers look for evidence that staff have been trained in proportion to their work. Look for a certificate that records the course, hours, completion date and refresh date and can be verified. Lift College's certificate shows all of these, with a unique number and verification link.
Is online allergen awareness training valid?
Yes. Food law requires staff to be trained and supervised in food safety matters in proportion to their work, and online training is the usual way food businesses meet that for allergens. This course covers the 14 allergens, the information rules for each type of food, kitchen controls and service. Your employer will also show you its own allergen matrix.
How often should allergen awareness training be done?
There is no legal interval, but menus, suppliers and the law change, and an out of date allergen matrix is the most common failing inspectors find. Lift College recommends refreshing every 12 months, in step with food hygiene training, and the refresher is free. Refresh sooner if your menu or suppliers change substantially.
What is Natasha's Law?
The name given to the prepacked for direct sale rules that took effect on 1 October 2021 across the UK, after the death of Natasha Ednan-Laperouse. Food packed on the premises before a customer orders it, such as a sandwich in a chiller, must carry a label with the name of the food and a full ingredients list with the 14 allergens emphasised.
What are the 14 allergens?
Celery, cereals containing gluten, crustaceans, eggs, fish, lupin, milk, molluscs, mustard, nuts, peanuts, sesame, soya and sulphur dioxide or sulphites above 10 milligrams per kilogram or litre. These are the allergens the law requires you to declare, although customers may react to other foods and every request should be taken seriously.
What should I do if a customer has an allergic reaction?
Call 999 and say anaphylaxis if there is any difficulty breathing, swelling of the face or throat, or collapse. Help the person use their adrenaline auto injector if they have one, keep them lying down with legs raised unless they are struggling to breathe, and stay with them. Keep the food and packaging for investigation.
Does it count towards my CPD?
Yes. The course is 1 hour of learning, shown on your CPD certificate issued by Lift College, so you can log the hour in your CPD record. The certificate also shows your completion date and a recommended refresh date 12 months on, with a unique certificate number your employer can verify.
