You can do food hygiene level 3 training online in the UK with Lift College. Food Hygiene Level 3 is 10 hours of learning in 8 short modules, including the seven HACCP principles, supervising staff and preparing for inspections. It costs £19.99 pay once, gives you a CPD certificate issued by Lift College the same day you pass, and comes with a free refresher every 3 years. Employers look for a certificate that records the course, hours, completion date and refresh date, and Lift College's certificate shows all four.
What employers look for in an online food hygiene level 3 certificate
Your employer decides who needs which level of training, based on the roles in the business and its own food safety procedures. The law requires people responsible for a business's HACCP-based procedures to have adequate training in applying the HACCP principles, and that is the gap Level 3 fills. When an employer or food safety auditor looks at a Level 3 certificate, they usually check:
- Content that matches the role. HACCP principles, supervising and training food handlers, allergen management, temperature control and inspections.
- A verifiable record. The course name, the hours of learning and the completion date, with a way to confirm the certificate is real.
- Content that follows current UK food law. Regulation 852/2004, the Food Safety Act 1990, the food hygiene regulations for each UK nation and Natasha's Law.
- A refresh date. Evidence that training is kept up to date.
Lift College's certificate does each of these. It records Food Hygiene Level 3, 10 hours of learning, your completion date and a recommended refresh-by date 3 years later. It carries a unique certificate number and a verification link, signed for Lift College by Kate Strohm, Managing Director. GOV.UK guidance tells food businesses to "keep a record of any training staff have completed so you can show this during an inspection", and your PDF certificate gives your employer that record.

What the Lift College course covers
Food Hygiene Level 3 builds on Level 2. There are 8 short modules, each with a knowledge check, then a multiple choice final test with an 80% pass mark and unlimited free retakes.
- Food safety law for supervisors. The duties of food business operators and supervisors, and how food law is enforced.
- Hazards and contamination. Microbiological, chemical, physical and allergenic hazards, and how to control them across your operation.
- Temperature control and monitoring. Setting and checking safe temperatures for delivery, storage, cooking, cooling and hot holding.
- HACCP principles in practice. The seven HACCP principles, from identifying hazards and critical control points to records and verification.
- Allergen management. Controlling the 14 allergens across suppliers, recipes, preparation and labelling, including Natasha's Law.
- Cleaning, premises and pests. Cleaning schedules, premises and equipment standards, waste and pest control checks.
- Supervising and training staff. Instructing and training food handlers, hygiene rules, illness reporting and keeping training records.
- Inspections and improvement. What happens during a food hygiene inspection, responding to findings and keeping standards improving.
By the end you can apply the seven HACCP principles to your own kitchen, set critical limits and corrective actions, keep records that show your controls work, and prepare your team and records for an inspection.
The law and guidance it is written around
- Regulation (EC) No 852/2004, Article 5 (assimilated law). Food business operators must "put in place, implement and maintain a permanent procedure or procedures" based on the HACCP principles.
- Regulation (EC) No 852/2004, Annex II, Chapter XII. Food handlers must be supervised and instructed or trained in food hygiene, and those responsible for the HACCP-based procedures must have "adequate training" in "the application of the HACCP principles".
- Food Safety Act 1990. Makes it an offence to sell food that does not meet food safety requirements, or that is not what the customer asked for.
- Food Safety and Hygiene (England) Regulations 2013, Food Hygiene (Wales) Regulations 2006, Food Hygiene (Scotland) Regulations 2006 and Food Hygiene Regulations (Northern Ireland) 2006. Enforce the food hygiene rules in each UK nation.
- Food Information (Amendment) (England) Regulations 2019 (Natasha's Law). Since 1 October 2021, food prepacked for direct sale in England must show its name and a full ingredients list, with allergens emphasised.
GOV.UK guidance says food businesses "must be able to show that your staff have the right skills and up-to-date training for their role".
