About this course

HACCP Training (Ireland)

You can do HACCP training online in Ireland with Lift College's HACCP Training (Ireland) course, written for workplaces in the Republic of Ireland. It is 2 hours of learning in 6 short modules, covering what HACCP is and why Irish food businesses must have it, the prerequisite programmes that support it, biological, chemical, physical and allergen hazards, each of the seven HACCP principles in turn, and how to keep the records an Environmental Health Officer will ask to see. It costs €22.99, pay once, and your CPD certificate issued by Lift College is ready the same day you pass. Lift College recommends a refresh every 3 years, and the refresher is free.

Every food business in Ireland, from a coffee cart to a meat plant, must put in place, implement and maintain procedures based on the HACCP principles. That duty comes from Article 5 of Regulation (EC) No 852/2004, which applies directly in Ireland and is enforced here through the European Union (Food and Feed Hygiene) Regulations 2020. The Food Safety Authority of Ireland (FSAI) is the competent authority, and Environmental Health Officers inspect premises on its behalf. Annex II of the Regulation also requires that staff are supervised and instructed or trained in food hygiene, and that the people responsible for the HACCP procedure are trained in applying the HACCP principles. An inspection that finds no working HACCP system can lead to an improvement notice, a closure order and publication of the business's name on the FSAI website.

This course explains the seven principles in plain words and shows how they turn into a food safety management system a small Irish business can actually run: a flow diagram, critical control points such as cooking and chilling, critical limits, monitoring, corrective action, verification and records. It is for chefs, kitchen supervisors, deli and cafe managers, owners of restaurants, takeaways, shops and food stalls, and anyone in a food business in the Republic of Ireland who is responsible for the HACCP procedure or works within one.

By the end you can
  • Explain what HACCP is and where the duty to have it comes from in Irish and EU law
  • Describe the prerequisite programmes that must be in place before HACCP can work
  • Identify biological, chemical, physical and allergen hazards and how they get into food
  • Apply the seven HACCP principles to the steps in your own food operation
  • Set critical limits for cooking, cooling, chilling and hot holding and monitor them
  • Carry out corrective action when a critical limit is missed and record what you did
  • Keep the records an Environmental Health Officer expects to see on inspection
  • Review and update the HACCP plan when menus, suppliers, equipment or staff change

FAQ

Questions about HACCP Training (Ireland)

Is online HACCP training valid in Ireland?

Article 5 of Regulation (EC) No 852/2004 requires people responsible for the HACCP procedure to be trained in applying the HACCP principles, but it does not name a particular course or provider. Your employer, or you as the food business operator, decide what training meets that duty, and an Environmental Health Officer will want to see training records alongside a working HACCP system. This course and its same day certificate give you both the knowledge and the record. Lift College does not claim FSAI approval; the FSAI does not approve training courses.

How often should HACCP training be refreshed in Ireland?

Irish and EU law do not set an interval, but inspectors expect training to be kept up to date and the HACCP plan to be reviewed whenever menus, processes, suppliers or equipment change. Lift College recommends a refresh every 3 years, and the refresher is free.

Do I still need food safety training if I do HACCP?

Usually, yes. HACCP training is for the people who design, run and check the food safety management system. Every food handler also needs food hygiene training matched to their work, which the FSAI describes as Level 1 and Level 2 skills. Lift College's [Food Safety Training (Ireland)](/cpd/food-safety-training-ireland) covers those skills. Specialist processes such as vacuum packing, sous vide or meat processing may need further training and a more detailed plan.

Is this course different from the UK HACCP course?

Yes. This edition is written for the Republic of Ireland, with Regulation (EC) No 852/2004 as it applies here, the European Union (Food and Feed Hygiene) Regulations 2020, the Food Safety Authority of Ireland and Environmental Health Officers. Food businesses in the UK should take [HACCP Training](/cpd/haccp-training), which covers UK law.

How do I set up a HACCP plan for a small cafe in Ireland?

Start with the prerequisites: cleaning, pest control, suppliers, personal hygiene and temperature control. Then draw a simple flow diagram from delivery to service, list the hazards at each step and mark the critical control points, usually cooking, cooling, chilled storage and reheating. Set a limit for each one, decide who checks it and how often, write down what you will do if a check fails, and keep the records. The FSAI's Safe Catering pack gives small Irish businesses a ready-made set of forms, and this course shows you how to fill and use them.

How long do I keep access?

You keep your access for as long as Lift College offers the course, and never less than 3 years from the day you buy. Your certificate PDF is yours to keep.

What is the free refresher?
